Buckwheat Starter

My buckwheat starter is still young. Just three days old and it’s winter here in Australia. It has some nice bubbles and has doubled in size. I put in some sugar to speed up the process. The starter will have eat the sugar. Now it is bubbling I will use just buckwheat and filtered water. Hubby has celiac and he misses sourdough. Making gluten free sourdough is very difficult. Not impossible. Just difficult. I have high hopes for the buckwheat starter. It has a lovely nutty aroma still. But I expect good fluffy texture and structure. I go by scent and rise for when I feed my starter. I am excited to share my results as I explore gluten free sourdough.
