Toasted Oat Milk

I have to be dairy free. What I was led to believe was intolerance escalated to hives and other symptoms. Lactose free milk still made me react. Cheese always has. So I bought a Nutr nut milk maker. Today I decided to toast my oats. I’m glad I did. It tastes way better. The main thing I don’t like about homemade oat milk is the fact it tastes like raw oats and water with vanilla. I can’t get around it. The texture is great. It’s better if it’s 1:1 oats to almonds. But I’ve always believed there’s a better way. This went great in my coffee today. It would be even better used in breakfast cereals or pancakes.

I toasted 4 tablespoons of my wheat free oats in a pan until it smelled like popcorn. Colour isn’t always a reliable indicator. Go by the smell and remove from heat immediately into the Nutr with room temp to cold water. It won’t be slimy because it’s toasted but it will still be creamy. Add a pinch of salt, a teaspoon of vanilla or too taste and 2 teaspoons of maple syrup or to taste. I used maple because it’s nice and it’s low GI. Select oat mode and wait till finished. Strain and enjoy. If you want to do this with a blender or NutriBullet then use 360 mils (1.5 cups) water and blend for 30-45 seconds. Until fine. It doesn’t get slimy as quick as raw oats. The flavour is really nice but it requires more frequent stirring as it does separate from the creamy texture and water more than raw oats does.

This would also go great with toasted rice milk. Toast rice milk is similar except it must be soaked either overnight or for 8hrs until plump. Same process in that you measure out brown rice and toast until golden brown and smelling like popcorn. Soak overnight and use a blender or the oat nut setting of a nut maker machine. Strain and enjoy.

I don’t regret getting this machine. It’s been way easier to use. Less thinking and the metal strainer is good enough. I would however, prefer to use a cheese cloth or a nut milk bag for almond milk. But I’m super fussy with my non dairy milk textures.

Even if you don’t use a nut milk maker but you are happy using a blender, try toasting your oats first. It’s worth it!
