Cheesy Potato Balls But They’re Gluten Free

I didn’t measure anything. I winged it and adjusted my recipe as I went. I only had instant mashed potatoes and was desperate for something different but easy. So I made a gluten free version of potato and cheese balls. There are a fair amount of videos on YouTube about how to make them but very few that are gluten free. I used YesYouCan Plain gluten free flour. I mixed the instant mash to be thick and added some shredded cheddar cheese. I added some salt, pepper and garlic powder for flavour. I didn’t have any onion powder otherwise I would have added that too. Getting the right amount of flour was hard. At first I did too little. So I did test balls until I got it right. But when I did, they were fantastic. They did not work in a 1:1 style. I actually used more gluten free flour as they kept separating or oozing. I eventually got it right. When I did they were perfect. The outside had a very light dusting, creating a lovely crusty skin. I’m glad these weren’t too difficult to make.

But they were tedious. Worst thing is that depending on the weather and season you may need more or less flour. It is good to let the mixture rest and let the xanthum gum bind fully. I had about two cups of potato mash and added cheese until I was happy with about a cup of flour to start with and just kept testing little potato balls until it was right. When I got it right, they were great!

The funny part was I had my suspicions that bubs would hate the balls so I made some potato sticks. Loved the sticks as he is familiar with fries. Hated the balls. But he liked it and tried something new so that was fun for both of us.
