Gluten Free Tuna Patties

Normally my toddler likes tuna but he just wasn’t having it tonight. His teeth are bothering him yet again. His fangs are coming through but we loved the little fish cakes. My biggest issue especially gluten free is it turning out too wet and gummy and or fragile. This time I tried homemade breadcrumbs.

Ingredients:

  • 2 small cans of Tuna. Ours are 95 grams.
  • Two medium potatoes that will make around the same amount or slightly more than the tuna. I like mine with a lot of tuna. Potato amounts are preference based
  • 1 egg
  • Two slices of gluten free bread
  • Mixed veggies. I used frozen veg
  • Two spring onion tops. Or more to taste.
  • Salt to taste
  • Black pepper to taste
  • Onion powder
  • Corriander powder* optional

I chose to wash, peel and dice my potatoes so I could boil them. I wanted these fairly quick. I assembled my veggies, tuna and the spring onion along with seasoning in a bowl while waiting on the potato to cook. when the potato chunks were ready I strained and ran under cool water to bring down the heat and make it easier to manage. I combined it with the other ingredients and mashed and mixed as I went. The frozen veg sped up the cooling making it the right temp to add my egg after everything was combined.

My gluten free bread was getting stale so I tore it into chunks and pulsed it in my NutriBullet blender until I had bread crumbs. But I googled it first to make sure I wasn’t going to get a nasty doughy mashed surprise for trying. Each article said the same thing. Quickly pulse it and tear it into chunks. I did each slice separately just incase it went weird or doughy. Turned out great! I was very surprised. Then I added the bread crumbs last and mixed with a spoon before rolling balls I squished into little medallions. I did the breadcrumbs last because gluten free bread can be very drying and absorbent in mixtures. Two was enough for my mixture. The small sized Pattie’s was in hopes my toddler would enjoy it but he just didn’t want it and instead got something less offensive to him. I shallow fried them in olive oil. About 3 minutes each side on a medium heat.

Last night he had a bad night with his teeth bothering him and running a temperature and today he seems to still be having dental trouble. But it doesn’t mean I won’t offer it again another time when he is not having so much trouble with his teeth. It was a very clear refusal. He did eat a piece and swallow it but he just didn’t want it. Instead he got something else gentle and had a nap.

So far he has favoured salmon cakes best. But salmon is a bit to expensive right now. I would redo this with salmon and probably add a bit of garlic powder.
