Quinoa Veggie Patties With Instant Potato Mash Gluten Free

They turned out great. I had to add some flour to thicken the batch. It was fairly thin so I had to get it to a sticky batter. I shallow fried them. The batter was fairly gooey but not too much. I carefully plopped it in olive oil. I did not measure anything I just eyeballed it and guessed my way through. These aren’t vegan. But it wouldn’t be hard to make it vegan. You would just have to swap out the egg for a vegan cheese as a binder and steam or boil a fresh potato as not many instant potato mash is vegan.

If I had of used a fresh potato then I would not have needed to add gluten free plain flour. I soaked some white quinoa over night. I added in some frozen peas and corn so it spread through nicely. But I had less than I though. So to fatten it up I grated half an onion and one carrot and lightly pan fried the two in olive oil with some salt, pepper, powdered sage, coriander powder and a small amount of curry powder. I used a really, really small amount so it would mostly add colour and a touch of flavour because I had no turmeric. I wanted my toddler to eat these and his palette is still sensitive to spice even though he likes it. I then mixed up some deb potato and had one part mash with two parts of the quinoa, an egg to bind and gluten free flour as needed to thicken it so it would be stronger and easier to fry. Mixing it up was simple enough. I shallow fried in small batches. They looked like chicken nuggets and tasted like bubble and squeak veggie patties. My toddler likes them. He ate 1 and a half quite happily.

He gets fussy with veggies if there’s no meat involved. This was a great way to get some mixed veggies into his diet without complains and the benefits of quinoa and keeping him feeling full. These would be easy to season differently and experiment with. They’re a good size for small hand and provide a pleasing texture. It wasn’t dry or too wet. It was quite lovely actually. I need to experiment with it more before giving actual measurements. It could still use some improvements but not a bad first try. I have leftover quinoa and veggie mix. Today I will try it without potatoes and flour and just use an egg as a binder like I had seen in a YouTube video and shallow fry and see how that goes.
