Gluten Free Tortillas

Using Well & Good gluten free flour this is the first gluten free tortilla I have made with strength, good chew and flavour. it didn’t fall apart or become brittle and was capable of a tight wrap. But it was so hard to get it in the pan and make it thin enough. I had various thickness because I wanted to try it out. I didn’t cook them much past this but I did get a nice amount of bubbles and puff. I followed the websites recipe but it was far too wet. But it worked. It worked well. This means I can make gluten free tortillas and other types of wrap breads for a much more affordable price and to the sizes we need. Next I want to try a flatbread but I am unsure of how it will do. I fear it will be to wet and soggy. But only one way to find out. When I get a flat bread I will add psyllium husk and post the results.

More importantly, when these cooled they were very stiff. Reheated they went back to being soft and pliable and still didn’t crack or become brittle. I have had trouble rejuvenating gluten free tortillas. They’re often best fresh. We love wraps, salad wraps, tacos and burritos. Chicken salad wraps are some of the easiest lunchbox and dinner meals I can send hubs to work with or premake for myself but gluten free often goes weird, especially if you make it in advance. I wouldn’t have that issue with this one. It also didn’t get soggy and weird with the juices of our meal. It kept its strength. I’m super happy with the results. I would also like to attempt a focaccia with this flour. It looks promising but of course there are issues that could happen. With this flour it already has xanthum gum so if the flour is over hydrated it could be wet and flat. I have found better success adding psyllium husk for a fluffy texture but I need to experiment more.

Here is the link to the recipe I used. Definitely roll out between two sheets of baking paper. It made things a lot easier. I used a saucepan to press my dough before rolling it out more. I would love to experiment with more ideas when I have time.
