Another Gluten Free Bread

Please ignore the spice rack with pain on it in the background. I really thought this would collapse to be honest. It deflated slightly while cooking. I probably needed some more flour. I forgot eggs in this one and it turned out just fine. This loaf was better than I was expecting. My recent loaves were all duds and didn’t rise. Turns out my yeast was almost inactive and it became weaker and weaker.

For this loaf I used:

  • 1 and a half cups water
  • 2 tablespoons psyllium husk. Whole husk not powder
  • 1 tablespoon instant yeast
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 3 tablespoons oil
  • 3 cups Woolworths brand Plain Gluten Free Flour.

I combined everything but the flour and stirred well before slowly adding flour while using a hand mixer and dough hook attachments. I definitely could have added more flour and next time I will. I kept it simple. Then when I was satisfied with how well it was mixed I put it into a bread loaf pan that I sprayed with spray olive oil.

I proofed it until it reached above the rim. Almost double. Any longer and it may have over proofed. Time I proofed it for is not reliable as its winter here. It’s better to go by size. I just called it while it looked nice and double size. Glad I did because it did very slightly deflate after cooling down. But I think that was more due to hydration.

I intended to add eggs and I just simply forgot. I feel like if I had, then I would have gotten extra rise but I’ll save that for the next loaf. This is a good loaf. Not to bland like some have been. Feels nice. Feels like bread. Good chew. Currently moist but might be dry by tomorrow. Crust was good. Not too hard or too chewy. I’m very impressed with the Woolies brand flour. I want to try Yes You Can Gluten Free Plain Flour and the pizza flour version by the same company next.

I had trouble getting appointments but it’s been confirmed that both baby and hubby have celiac. I also love to bake and cook so I’ve been experimenting and trying hard. thankfully baby has liked most of my breads and they toast up well too. He seems to enjoy them as well.

Using the same flour I made a really good cheese sauce. Since winter is coming it might be time to have broccoli and cheese soup again.
