Gluten Free Bread & What I’ve Learned So Far

This is my loaf I made today and this one did not collapse from over hydration. Nor was it too dense. It had form and was springy and spongey. It wasn’t caky but actually felt like bread and had a close smell and taste to bread. I make these for my husband and toddler and finally I have made a loaf he likes. I have tried many things. Many recipes and flours. This one should work with any plain Gluten Free flour. The key importance is the right amount of eggs, adding apple cider vinegar and yoghurt. Then there’s the issue of xanthum gum and psyllium husk. Today I got all my ratios right. The other most important part was making the proofing setup steamy. I put my loaf in the oven with the oven light on without heat and a bowl of boiled water. The steam helped the yeast rise. Then before baking I removed the steam bowl. It makes a huge difference in rise and cutting the proofing time way down. Especially since we are approaching winter soon in Australia. They were all out of my new favourite flour to make bread with so I used Coles “I’m Free From” brand of Plain Gluten Free Flour. It’s quite good. But lately I prefer the Woolworths brand. the next loaf I will measure my amounts and share the recipe. But with the next one I plan to do an overnight proof and see what changes.

It sprung back to shape after squishing. The taste was good and it toasted well.

The best part for me was that he thoroughly approved. I later toasted some and he loved it toasted. I did to. It was really nice but the middle was still soft bread. The only reason I am not sharing much about the recipe today is because today I winged it and took a chance. I did not know what to expect as I wasn’t using my now normal flour. I honestly expected a bland log. I was very pleasantly surprised. My recipe is not vegan friendly, just a warning but it wouldn’t be hard to convert it to a vegan version. The results would just be different.

Next bread post I should have measurements and whether or not an over night fridge rest/proof is better.
