Almond Butter & Banana Porridge

Two days ago I bought the wrong bag of oats. I saw wheat free from my normal Red Tractor brand of oats and didn’t think twice. Because for the longest time it was only for oats. Turns out I bought wheat free Oat, Chia and Flaxseed mix. But this was a good thing. Baby likes this texture more and I didn’t have to blend it. Hubby did as well. Because it was blended it is less heavy on the belly and lighter in carbs.

So this morning I put in a generous dollop of almond butter. I kept it plain. Half the amount I would normally cook of oats and because of the gel from the chia and flaxseed I was about to get a large serve from very little fry porridge. Probably only two tablespoons. I thickened to my liking cooking it in milk. Once it started to thicken added my almond butter and did no sweeten. After putting it in a bowl I added maple syrup and banana slices, but no maple for baby’s serve. He loved this. He now has two porridge recipes he likes. Spiced orange and Almond Butter with Banana.

If you haven’t tried it, definitely recommend. Cinnamon sugar is also a great topping or honey. Tastes great with dark brown sugar as a sweetener but still good with no sweetness at all. I poured too much maple this morning but it was still good. I would like to try these as overnight oats. I want to try coffee overnight oats.
