Gluten Free Coconut Banana Porridge

This was more about me trying to use more items in the cupboard because we are moving soon. For this I used Ayam coconut powder added to one metric cup of water. I toasted some quinoa flakes until it smelled nutty and a bit like popcorn, added the coconut milk and thickened. Then I added vanilla essence and some cinnamon sugar. We all ate the same thing. To thicken it up and smooth the texture I added Bubs Organics Banana Rice porridge. After serving as it was quite dense I had to add regular milk and then I added some banana slices. This was super filling. Our portion needed sweetening. Baby had more than I expected him too. It was fairly quick and easy. So far out of all of the quinoa porridge recipes, baby has liked them with berries or blueberries and yoghurt best.

Tomorrow I will just wing it and see what happens. He is teething so he is generally unhappy with everything lately so there’s not been much to post about food wise. We are moving into our new house on the weekend so updating will be either slowed down or randomly.
