Toasted Quinoa Flakes and Almond Butter Porridge

So I tried Wellness Road Quinoa flakes. It was very vegetable/beany in flavour but it wasn’t pleasant and it was a little bitter. Orgran had no bitterness. One thing about quinoa is it needs to be soaked or soaked and toasted. The Wellness Road flakes probably weren’t soaked and dried before being turned into flakes so this morning I toasted them. HUGE improvement to the flavour. Without toasting this particular brand the almost bean like flavour was too strong and not very palatable. I remembered I normally toast whole quinoa why not flakes? Unfortunately not a lot of people out there have any posts about toasting flakes.

I toasted starting on high and turning down to medium because my current stove takes a long time to heat up. I had to turn it down once it started to toast because they are thin flakes. I went by smell and not by colour. A good thing I did before it started to get slightly Smokey. I almost burned them. Once it smelled right I removed from heat and added milk right away. Then after stirring I returned to the medium heat and added vanilla bean paste. Once the flakes were thick enough after about a minute or two I placed in a bowl. I made enough to share with baby. I added a bit of maple syrup and a good dollop of almond butter while it was hot and stirred it in. I had to add some milk to thin it a bit and then I added banana slices.

Baby likes this very much. He loves almond butter and banana. The toasted quinoa flakes added a slightly nuttier flavour. As he is approaching 16 months he needs a good filling breakfast and more than just toast especially as more of his teeth are coming in sometimes toast hurts to much and porridge is the way to go.

Bottom line, if you are new to quinoa flakes like me and yours are a bit bitter or raw tasting, toast it first. You will probably be pleasantly surprised and might find it a lot more enjoyable ❤️
