Gluten Free Cheesy Broccoli, Carrot and Rice

I really needed an easy to chew but tasty dish today. Baby is having a bad teething day. This went down well without rejection.

I also needed a cheesy broccoli alternative with no wheat flour or wheat pasta. So I just winged it with rice. I used a grater on the carrots and broccoli and added it to rice that was already cooking. I added water where necessary. The aim was almost congee like consistency except the grains were still whole. Just super soft. I then added butter to taste and Liddels Lactose Free cheese with some Philadelphia Lactose free cream cheese. I made a lot so I had a bowl. I added some salt to mine. It was surprisingly good. The thickening from the rice made up for not using flour to thicken. Because the veg was grated it was all soft and easy to eat. I just tasted and added as I went. It was a nice enough dish that I would consider making it a regular meal for lunches or dinner. He has some leftovers so he will get that when he is hungry. I am sorry I have no real measurements. I basically added 5x water to rice with an almost equal amount of finely shredded veg which shrug after cooking. The rest to taste as I went.
