Mango With Milk & Rice

Nothing fancy and I did not measure. Basically I used about two table spoons of low gi Doongara rice by sun rice. My favourite brand of rice. I over cooked the rice to the point just before it turned congee like and added about two tablespoons of milk. I let it thicken on medium heat. Removed from heat poured in a bowl and added cold fresh mango. The rice was soft enough to crush with my tongue but not to soft it lost form. I didn’t want baby to be chewing too much as his gums are sore.

Adding the mango last cooled the rice mixture and retained sweetness. You could cook the mango in but I find it brings out an unpleasant note sometimes and I didn’t want to cook out to many nutrients. Baby loved this. The Doongara rice has a natural sweetness to it and was very soft. He ate the whole serve. Lately he hasn’t been hungry or hasn’t wanted food due to teething and I wanted to make something he would love but would keep him full that shouldn’t hurt his gums. The mango was icy cold as it was kept in the refrigerator so it brought the meal temp down to lukewarm. I also gave him some watermelon and he chewed on the side with the tooth coming in.

Sometimes it’s hard to feed teething babies and toddlers but meals like this can help out a lot. You could even skip the fruit and just have the rice milky and soft with your preferred milk of choice. This would also work with banana or strawberries. My baby loves mangoes, watermelon and strawberries and he is starting to enjoy rice. This meal is also gentle on the belly and can help when baby is feeling fussy from teething. But it isn’t guaranteed to work for everyone. You have to experiment. If you haven’t tried this, please do. It might help you out. You can also try it with stew fruits or veggies.

Best part is that it’s still gluten free and it doesn’t take very long to prepare at all.
