Lamb Mince and Rice Balls

Just want to say straight off the bat if you want a vegan version simply swap out the meat for lentils and be sure to use cooked cooled rice.

I’m the image is two of three balls. He ate almost two. He was full and kept eating he loved it that much. In these rice balls:

  • Sun Rice Doongara low gi rice
  • Lamb mince
  • Diced carrots
  • Diced red onion
  • Fresh cracked black pepper

How I made them was simple enough. I made the carrots a small enough size for easy of chewing and putting it into the rice and the same for the onion and put both the carrots and onion in a fry pan with some olive oil. I added a small amount of fresh cracked pepper here. He likes pepper so I’ve been adding small amounts.

I then pan fried the minced meat. NO salt! I also added a small amount of pepper. I cooked it most of the way extracting as much fat as possible before combining and mixing in a foil tray and cooking further in an electric pellet smoker. Home smoked food is safe but prepackaged is not because of the sodium content. I used this time to wash and cook the rice. When the rice was done and I opened up my multicooker and fluffed the rice I let it cool and made some quinoa salad for me and hubs. This gave me enough time to cool the rice and let the lamb brown slightly in the smoker and the veggies soften a little more.

Once the right was cool enough to handle I took the tray out of the smoker and combined the rice. I took out the baby’s portion and made three golf ball sized rice balls with my hands. I used food grade latex free gloves while making the balls. I only made enough for his lunch. Since everything was gluten free he had no issues. He was able to eat it with some assistance for the first bite and he played with the rest of it on the tray of his feeding chair. He happily picked up and ate pieces.

Later that night he slept very well with a satisfied tummy. I did give him sips of milk during lunch. This was an easy meal to prepare. I would like to try just carrots next but grated
