Creamy Chicken and Peas With Rice

  • Chicken mince
  • Peas
  • Milk
  • Cream Cheese
  • Tiny amount of garlic optional
  • Oregano and powdered sage
  • Optional Celery Salt
  • Rice

Celery salt is very low sodium and contains a lot of celery seeds. It can add a stock flavour to food. I added a small amount. Toddlers don’t need much salt at all. Feel free to skip it especially if your child is under 12months old. I have no measurements.

I first sautéed shallot onions for sweetness. Then emptied into a bowl and set aside. It was about a table spoon of diced onion. The I added my herbs to some chicken mince in a small egg frying pan. The minced chicken flattened out covered most of the bottom of the pan. This stops me cooking more than one cup servings by using a non stick egg fry pan. Once the chicken was well cooked and seasoned I added the cooked shallot onions with frozen baby peas. I prefer baby peas and it was in my freezer.

Then I added enough milk to just almost cover and brought to a gentle simmer and added a pea sized amount of garlic paste. Then I added the cream cheese to start melting and combining with the milk to form a runny but creamy liquid.

Then while it was still fairly runny I added some microwave ready rice. I didn’t heat the rice. I let it absorb liquid by tossing it around in the food. It made a good one metric cup serve. It is very filling and he happily ate half. I gave him chunks on his feeding table to play with and eat. He seemed to favour the peas which was interesting. I mostly feed him but still offered chunks for him to experiment and play with.
